I don’t remember hearing anything about the Enterprise during the Dominion War. I believe the Enterprise E was newly christened shortly before the war. Does anyone know if the ship fought, and if so to what extent?

I don’t remember the Enterprise being part of the battles with the Dominion . I’m guessing they were part of the Third Fleet which fought against the Breen when they attacked Earth .
I don't think it was ever mentioned. I think they might've been on a deep space assignment, too far away to be in the dominion war, or patrolling the neutral zone. If they participated in any battles, it makes sense that maybe they participated in the breen battle, like @Jandcats mentioned.
I remember reading somewhere that the Enterprise-E was in its shakedown phase and was putting out brush fires and resolving other conflicts around the Federation while the primary fleet was engaged with the Dominion. Starfleet also didn't want to risk having the Enterprise-E on the front lines and have it get damaged, captured, or destroyed, since having the juggernaut flagship go down would be a huge loss of resources and morale.
@Championmuru Whoever wrote that must’ve forgotten that Star Trek: First Contact occurred before the Dominion War. I can’t imagine that the Enterprise-E sat out the entire war.

@WoundedDefector Yeah the shakedown would've been completed before the Dominion War. The rest of it could still be true, with the Enterprise working on other Federation matters. You had mentioned Star Trek: Insurrection, where Picard said the Federation were looking to recruit more worlds to help strengthen them against the Dominion, so they could've been doing multiple diplomatic missions.
Though non-canon, the novel series offers many adventures during that period.
There's a duology within the Dominion War quadrilogy that have the Enterprise bring Ro onboard to find a Dominion attempt at building an artificial wormhole that occurs simultaneously with the DS9 season 5 finale and Season 6 opening miniseries.
There's another book called Battle for Betazed chronicling the dominion attack on Betazed and Troi goes to protect her mother and help her homeworld.
Then there's an anthology collection titled Tales from the Dominion War that has short stories from various crews including New Frontier's Excalibur
Like i said, non-canon, but official canon is pretty quiet on the subject so i take the books as legit until such time the shows contradicts them
@Championmuru I can imagine the Enterprise-E doing multiple missions that were unrelated to the Dominion War (w/1 of those missions being depicted in Star Trek: Insurrection). I can’t imagine that it sat out the entire war. It’d make sense if it participated in the Bolian Operation &/or defending Earth against the Breen. Losing the Enterprise-E would almost certainly be less of a blow to morale than losing almost every ship in an entire fleet (which was depicted as being a huge blow to morale), so that explanation doesn’t make sense to me.
I thought Ds9 mentioned them but don’t quote me on that
