I think Bajor (before or after the occupation, of course) as it always sounded like a very nice and mostly temperate planet. The Bajorans generally seem like nice people on average too (religious quirks notwithstanding).

Of course, what very little we've seen of Romulus makes it seem like it'd be a nice planet too (far more than the scorching desert Vulcan is). But, of course, it blew up, so...

Ben Sisko’s explanation to Admiral Ross about why he wanted to settle on Bajor after the war (I think it was in “Favor the Bold”) was enough to sell me.

Bajor is hands down one of the prettiest planets we’ve seen in canon Star Trek. The mountains, rolling hills, rivers, meadows, etc. It’s not constantly dark, constantly raining, or one giant city.

As a Klingon fan, I would find Qo'noS most interesting, but putting my real llife self on a Star Trek planet - well, Bajor would probably be the place to lead a halfways happy life.
