Interesting question. I generally don't like reboots (especially with the original cast when they're much older), but if a VOY reboot was made by someone other than the current production teams, then yes, I'd like a new VOY show with the original cast, because VOY is one of my favorite shows, but any new show with the VOY cast probably would never be nearly as good as the original VOY. Maybe just a limited, one season special supplementary season would be better than a whole new show.

No. Star Trek has way too much nostalgia pandering already, it needs to innovate again. I'd argue the last time the franchise did something really ambitious was Enterprise seasons three and four. I'd rather they follow that example, do something bold and risky.
To be fair to Paramount and CBS...the last time they tried to do something "bold and risky" with Trek...
...resulted in DIS. Which I don't think turned out how they hoped.
So they've been trying to re-find their footing on just what Trek is again by going "back to basics" and letting long time fans have greater input in production, and that's resulted in more than a little nostalgia pandering.
That said, I totally agree with you, Trek needs less nostalgia pandering and more...you know...boldly going where no one has gone before.
Absolutely not. We have follow up on plenty of the Voyager characters (with even more coming) and I will keep banging the "new Trek should be new" drum until the end of time.
Well when you take risks you're going to fail sometimes. Certainly DS9 and Enterprise had their share of failures, but failures as a result of ambition can be forgiven.
I also would much rather have all new star trek characters and stories, and much less nostalgia (or none at all), however, sometimes a bit of nostalgia or cameos can be fun too.
Also, with the kelvin timeline movies, some of DIS, and especially SNW featuring the original TOS characters, I really think it's time for star trek to stop featuring the original TOS characters as main characters in shows (as great as they are). They can never make a show that's as great as TOS, or characters that are as great as the original TOS actors that played them. PRO seems to be featuring a lot of VOY characters, which is fun, but isn't really new, or particularly original or creative.
Agreed, @Michael Benucci. Cameos or roles in new things can be done well (e.g., including Seven in PIC). If there's a 25th-century show eventually, I'd be happy with characters we know showing up from time to time or being referenced. Focusing on them (or their offspring/families) wouldn't be my preference and a full follow-up, a la PIC S3, is of no interest to me, for any of the classic shows.
Also agreed that TOS has had (maybe more than) enough love for a while.
Heck, if TOS has been overloved, then so has TNG as well, so all the more reason to do something new instead.
Honestly, PRO didn't feature as many VOY-specific characters as you'd think. I mean, sure, there's Janeway, and Chakotay for a good chunk of season 2, but other than the Doctor being present as a supporting character in season 2, that was really it for the VOY character cameos. Everything else were either cameos from other Trek shows or, even more likely, entirely new characters.
So it's not like PIC season 3, where it used any excuse it could to pull any obscure TNG-related thing out of the woodwork just for the nostalgia's sake--that's the sort of rampant nostalgia I'd rather Trek fully avoid.
What I really want is the show with Captain Seven leading the Enterprise-J, with the new generation crew of La Forges, Crushers, and so forth.
It can focus on all new characters, with the ‘Legacy’ characters in the background, providing occasional direction or guidance. This would allow alumni from TNG, DS9, and VOY to all appear, as appropriate, while still telling new stories about new characters boldly going.
