How long can a ship travel for without refueling its warp drive (with deuterium/antideuterium/dilithium)?

If the EMH is programmed with so much knowledge, and is superior to regular doctors, should it be used on a regular basis as the chief medical officer of ships and space stations, instead of regular doctors, and why?
The EMH:
Included the entire starfleet medical database.
Contained over five million medical protocols - ranging from possible treatments to surgical procedures.
Has the collective medical knowledge of over three thousand cultures (including every federation world).
Possessed information from two thousand medical reference sources (including gray's anatomy and comparative alien physiology).
Has the experience of 47 individual medical officers.
Is also supplemented with contingency programs and adaptive programs to learn while serving as a supplement of a normal medical staff in cases of emergency.
Contained fifty million gigaquads of computer memory, which was "considerably more than most highly developed humanoid brains.".

Why are science ships usually slower than other ships?
For example, the oberth (warp 7 - 8), nova (warp 6 - 7), miranda (warp 5 - 6), raven (warp 5 - 5.5), and romulan science ship (warp 6 - 7.8) (all science ships), are all slower than other ships (warp 9 - 9.99).

the personnel files and even the Lcars maps as well as the TOS medical bay among others are all readable. But when you look closely at the Ship computers most of the time (not counting the other times when sensor readings are written in numbers are letter based.) It is just a bunch of numbers in various boxes on the computer screen. While many will say that they are just random numbers put by the production staff, what is the in universe meaning of the numbers? It is important to point out that any cadet can read sensor readings and pre warp cultures with stolen UFP tech eventually crack the codes. The numbers also seem to be similar across cultures with Starfleet often able to decipher data from old and ancient computers. It wouldn't be to far off to conjuncture that every civilian in the UFP and beyond (among warp capable species) can read all the sensor data with ease. Thus in universe logic dictates that it shouldn’t be that hard for us to decipher the sensor data ourselves.
