Aristotle was an ancient Greek philosopher and scientist.
In 2285, James T. Kirk responded to Saavik's observation that humor was a difficult and illogical concept by referencing a quote attributed to Aristotle: "We learn by doing." (Star Trek II: The Wrath of Khan)
In 2374, the Leonardo da Vinci hologram said that if he were a sparrow and Aristotle himself lectured him until exhaustion, he could not grasp his teachings. Da Vinci used this position to accept his failure to understand the 24th century world with his 16th century knowledge. (VOY: "Concerning Flight")
Later that year, the USS Voyager encountered the fraudulent starship USS Dauntless. The ship had been altered to closely resemble a Starfleet creation, even including a Starfleet dedication plaque. The plaque quoted Aristotle: "Hope is a waking dream." (VOY: "Hope and Fear")
