The Bajoran Time of Cleansing is a month-long custom in the Bajoran religion in which people fast for a month and abstain from worldly pleasures.

During the Time of Cleansing in 2372, Quark noted that the Bajoran people were not the most sinful people to begin with and claimed the only thing the Bajorans were cleansing was his pocketbook. He attempted to make cuts in his employees' pay, which resulted in Rom and the other employees forming the Guild of Restaurant and Casino Employees. (DS9: "Bar Association")

This month-long period of fasting is reminiscent of the Muslim tradition known as Ramadan, in which one fasts for a month to remind oneself of how fortunate one is.
It is unclear how Quark managed during the Time of Cleansing during other years. No doubt the Cardassian's custom helped greatly during the occupation.
