Cannibalism was the act of eating one's own species. Earth had cannibals at one point, but no longer as of 2151. (ENT: "Broken Bow")

In 2152, Malcolm Reed became pinned to Enterprise NX-01's hull by a Romulan mine. Fearing he'd be blown up by the mine, he asked Jonathan Archer not to sever the spikes that held him there. He added that, if he let Archer amputate his leg, Chef would serve "roast Reed" for Sunday dinner. (ENT: "Minefield")

In a ghost story told by Commander Charles Tucker in the first draft script of ENT: "Strange New World", a group of Tellarite survivors were referred to as having resorted to cannibalism. These Tellarites, according to the tale, had initially survived the crash landing of their Tellarite transport on Pluto, but had then eaten one another.

In a figurative sense, cannibalism could also refer to stripping a piece of technology for parts to use elsewhere.

Henry Starling built his business empire upon cannibalizing the timeship Aeon. (VOY: "Future's End")

After crashing on Gamma Canaris N, Zefram Cochrane cannibalized his ship. (TOS: "Metamorphosis")

In 2152, Commander Tucker, while stuck on an Arkonian moon, managed to cannibalize the power supply from an Arkonian ship to repair a transceiver. (ENT: "Dawn")

The Tellarite ship Tezra was seized by the Klingon Empire. Believing the vessel had been impounded, its owner, Skalaar, turned to bounty hunting in order to pay the impound fee. It was not until his last mission, in 2153, that he learned the Tezra had been cannibalized several years earlier. (ENT: "Bounty")
