The eggplant (Solanum melongena) or aubergine was a plant from Earth with an edible fruit.

In 2151, eggplant was served aboard the Enterprise. Phlox remarked to Hoshi Sato in the Denobulan language that he didn't care for that vegetable. Sato attempted to reply in Denobulan that eggplant was not a vegetable but a fruit, but accidentally used the word for "nostril" instead of "fruit". (ENT: "Dear Doctor")

Among the questions posed by Ensign Spock to First Officer Una while stuck in a malfunctioning turbolift upon beginning his tour of duty aboard the USS Enterprise, was whether she liked eggplant. (ST: "Q&A")

In 2372, Joseph Sisko bragged to his son about the size of the eggplant he was getting from his garden, which he described "as big as Crenshaw melons and twice as heavy." (DS9: "Homefront")
