An elephant was a large quadrupedal mammal from Earth.

Listening to her father, Mike Burnham, tell the story of the girl who made the stars, Michael Burnham imagined elephants along with zebras and lions living "a thousand centuries ago." (ST: "The Girl Who Made the Stars")

In 2369, Captain Edward Jellico's son gave him a drawing of what Jellico believed to be an elephant. He showed this drawing to Deanna Troi, who agreed with his assessment. (TNG: "Chain of Command, Part I")

There were plans for an elephant to appear in "Shore Leave", but the plans never materialized. [1]
