Ketracel White-Hot was a brand of hot sauce that was served in Sisko's Creole Kitchen in the late 24th century. This red-colored sauce had a heat rating of 17,000,000 SHU (Scoville Heat Units of the Scoville scale).
While visiting Sisko's Creole Kitchen in early 2381, Brad Boimler added a couple dashes of Ketracel White-Hot to his gumbo. Taking a bite, he immediately turned flush and began sweating, after which he wiped his forehead with his napkin, guzzled ice water, cried, and finally fell face-first onto the table. Beckett Mariner added around half the bottle to her own bowl but was far less affected, remarking that her gumbo had a "nice little kick". (LD: "Grounded")
The name of the sauce is a play on the term ketracel-white.
A real substance with such a high Scoville scale rating would be both toxic and caustic.
