Peter Kirk was a male Human civilian in the 23rd century. He was the son of George and Aurelan Kirk. His uncle was Starfleet Captain James T. Kirk.
In 2265, Peter saw his uncle off when he began his five-year mission of exploration in command of the USS Enterprise. Peter was with his father, mother, and two brothers. (TOS: "What Are Little Girls Made Of?")
In 2266, he lived with his parents at the Deneva colony. Late that year, travelers from Ingraham B brought flying parasites to the colony; over the next eight months, these parasites infiltrated and overwhelmed the colony, infecting nearly everyone. By the time of the Enterprise's 2267 visit, Peter and Aurelan were infected and George had died, presumably resisting the parasites' control. Though Captain Kirk discovered how to destroy the parasites in time to save Peter and the colony, his discovery came too late to save Aurelan.
Peter had two siblings, but they had both passed by the time of the neural parasite invasion of Deneva. (TOS: "What Are Little Girls Made Of?", "Operation -- Annihilate!")

Peter Kirk was a major character in the novel Sarek by A.C. Crispin. The novel depicted him as a young man at Starfleet Academy and gave his full name as Peter James Kirk.
In the comic story "Echoes of Yesterday", an adult Peter hatches a plan to save his family by allying with a group of Sumellian telepaths to steal the secret of time travel from Admiral Kirk's mind. The Sumellians travel back in time in an attempt to save their homeworld from a major disaster while Peter travels back to Deneva in the year 2267. The Enterprise-A pursues Peter into the past and Kirk beams down to Deneva to confront Peter. With the truth revealed, Sam Kirk refuses to allow his son to change the timeline, even as he is infected by one of the parasites. Peter gets infected as well and Admiral Kirk is knocked unconscious by a stray phaser beam. Waking up aboard the Enterprise-A, Kirk is informed by the crew that they were forced to leave Peter behind as the original Enterprise had arrived in the system and they couldn't stay and risk being detected. The last panel reveals that Peter Kirk was the pilot who flew his ship into the Denevan sun.
In David A. Goodman's book The Autobiography of James T. Kirk, Peter joined Starfleet. By 2293, he had obtained the rank of Captain and was given command of the starship Challenger. In Goodman's followup The Autobiography of Jean-Luc Picard, Peter Kirk goes on to become an instructor at Starfleet Academy, with Jean-Luc Picard as one of his students.
In Operation: Annihilate, Part 1 and 2, his alternate reality counterpart survives and is not orphaned.
