A potato (Solanum tuberosum) was an edible root vegetable from Earth, a member of the nightshade family cultivated for its starchy tubers.

In 2151, Phlox recommended the potatoes in the mess hall of Enterprise NX-01 to Trip Tucker, but Tucker reminded him they were resequenced protein. (ENT: "Fight or Flight")

In August of 2151, Matthew Ryan chose a steak with a potato and broccoli for lunch aboard Enterprise NX-01. (ENT: "Fortunate Son")

Potatoes were among the crops that the colonists on Omicron Ceti III had planted in the 2260s. (TOS: "This Side of Paradise")

Sonny Clemonds originally ordered country fried potatoes from the replicator in 2364 before changing his mind. (TNG: "The Neutral Zone")

In 2367, while re-enacting a scene from A Christmas Carol on the holodeck of the USS Enterprise-D, Lieutenant commander Data, as Ebenezer Scrooge, told Jacob Marley's ghost that he didn't believe in him, for "You may be an undigested bit of beef, a blot of mustard, a crumb of cheese, a fragment of an underdone potato." In a Dominion simulation in 2371, Benjamin Sisko and Jake Sisko were eating potatoes, although Ben was too preoccupied with Admiral Alynna Nechayev and Borath's negotiations to hear Jake asking for him to pass him them. (DS9: "The Search, Part II")

In 2375, The Doctor showed Naomi Wildman the mitochondria of a cell, comparing it to a "little bitty potato". (VOY: "Once Upon a Time")

Azan and Rebi wanted to clone Naomi for the Annual Voyager Science Fair in 2376. However, the organizer of the event, Seven of Nine, suggested that they try to clone something smaller, so they chose potatoes. (VOY: "Child's Play")

The cloned potatoes that Azan and Rebi created were auctioned off in the It's A Wrap! sale and auction. [1] The potatoes weren't real, but made out of painted resin.
In an ultimately unused line of dialogue from the script of the 2009 film Star Trek, Montgomery Scott asked Spock if "mince and tatties" ("tatties" meaning potatoes in Scots), among other foods, existed in the future Spock had come from (the other foods were "piece and jam," and cockaleekie soup).
