Prototaxites stellaviatori

P. stellaviatori cultivated on the Discovery

Prototaxites stellaviatori was a fungal species, described as a mushroom.

The species was made up of an exotic material found not only in normal space but also in a discrete subspace domain known as the Mycelial network. Its fungal roots, aka mycelium, spread across the universe, fanning out into infinity. (DIS: "Choose Your Pain")

In 2256, this species was grown in the cultivation bay aboard the USS Discovery. Its mycelium spores were harvested for use in the experimental spore drive of the Federation starship. (DIS: "Context Is for Kings")

In the real world, Prototaxites were an extinct genus of fungi. They lived on Earth 420 to 370 million years ago.
Stellaviatori comes from the Latin roots stella ("star"), and viator ("traveler"), thus hinting at the species' properties.
