Rodeo Red's Red-Hot, Rootin'-Tootin' Chili was a chili recipe originating in the 20th century.
While brushing up on "classic American cuisine", Neelix created Rodeo Red's Red-Hot, Rootin'-Tootin' Chili for the crew in the mess hall. Two crewmembers developed a bad case of acute functional dyspepsia due to the number of jalapeƱos in the recipe. Neelix noted to Tom Paris that he would lower the amount of jalapeƱos (or as he pronounced it "ja-lap-e-nos") he used in the chili the next time he made it. (VOY: "Message in a Bottle")
