A society was an established group of people who all shared many cultural aspects.

During the Talosian's attempt, in 2254, to coerce Christopher Pike help them rebuild their civilization, they noted that because their life span was "many times yours", they had "time to evolve you into a society trained to serve as artisans [and] technicians." (TOS: "The Cage") When Captain James T. Kirk later reviewed the video of Pike's experience, he alternately described the Talosian's modus operandi as a "plan to breed a society of Human slaves." (TOS: "The Menagerie, Part II")

In 2266, when the android Roger Korby spoke of locating a planet colony that he could use to slowly produce and introduce further androids, he revealed that they "must be strongly infiltrated into society before the android existence is revealed. I want no wave of hysteria to destroy what is good and right." (TOS: "What Are Little Girls Made Of?")

According to Doctor Paul Stubbs in 2366, centuries before, baseball was the beloved national pastime of the Americas but was abandoned by a society that prized fast food and faster games. (TNG: "Evolution")

According Quark in 2370, Plegg took a computer chip and turned it into the modular holosuite industry and brought holographic entertainment to the most remote parts of the Alpha Quadrant which created profit centers from societies that could barely afford to feed their own people. (DS9: "The Alternate")
