Soup was food made of a liquid prepared with meat and/or vegetables.

One of Finnegan's many practical jokes was putting a bowl of cold soup in someone's bed. (TOS: "Shore Leave")

After Kamin regained consciousness after having been feverish for three days, his wife Eline prepared a soup for him that he found delicious. (TNG: "The Inner Light")

Soup was considered a light food suitable for convalescing patients. Jake Sisko asked for some after he became ill during the Battle of Ajilon Prime in 2373. (DS9: "Nor the Battle to the Strong")

In the final draft script of "The Corbomite Maneuver" (dated 3 May 1966), a bowl of soup was served by Yeoman Janice Rand to her commanding officer, Captain James T. Kirk. while in his quarters aboard the USS Enterprise. Kirk tasted and liked the soup, so he asked Doctor McCoy if he would like a bowl of it, though McCoy politely declined. The fact Kirk didn't finish his soup, as he was called to the bridge, distressed Rand. In the second revised final draft of the script for "The Corbomite Maneuver" (dated 20 May 1966), the food she served Kirk was instead dietary salad, which it is in the final version of the episode.
In an ultimately unused line of dialogue from the script of the 2009 film Star Trek, Montgomery Scott asked Spock if cockaleekie soup, among other foods, existed in the future Spock had come from (the other foods were "piece and jam," and "mince and tatties"). [1]
