Note that in the picture above, the tail section of the lobster is extended. Traditionally, a lobster is kept alive until it is prepared, and the tail curls up by reflex during cooking. If the tail is not curled, it suggests that the lobster was already dead, and the meat may be spoiled and unsafe to eat.
