In 2401, the Appalachia participated in Frontier Day celebrations near Sol Station. Along with the rest of the fleet, it was seized by the Borg Collective after its younger crew were assimilated by a Borg signal transmitted via Jack Crusher. (PIC: "Vox")

Star Trek: Picard Production Designer Dave Blass posted a promotional franchise-sanctioned one-sheet ship identification graphic of the ship on several of his social media accounts. Published after-the-fact, this promo image was rendered for Blass by freelancer Keene Sin from the Star Trek Online CGI game model as constructed by Donny Versiga. [1][2] Unlike several other Online models however, the Appalachia itself was not seen in "Võx", but only appeared as an onscreen reference in the above-featured computer display graphic.
