In 2278, the Challenger appeared on a Starship Mission Assignments chart on the bridge of the USS Bozeman after exiting a temporal causality loop 2368. (TNG: "Cause And Effect")
In 2293, the Challenger was assigned a deep space exploration mission in Sector 21166. The ship was named on a Starship Mission Assignments chart on the USS Enterprise-A bridge. (Star Trek VI: The Undiscovered Country)
Later that year, its registry appeared along with another unnamed Excelsior-class NCC-2004 on the Navigation console of the USS Enterprise-B. (Star Trek Generations)

Background information[]
According to a ship list included in the plans, and not seen in the extended cut of the movie, the Challenger was commanded by M. Michaels, and the ship was located in Sector 21166. The captain was named after the sixth movie's set decorator Mickey S. Michaels. [1]
For the display is Star Trek Generations, its silhouette was that of the refit Excelsior-class USS Enterprise-B.

In the non-canon board game Star Fleet Battles, USS Challenger was a Byrd-class Galactic Survey Cruiser, a modification of the Constitution II-class which replaces the photon torpedoes with special scientific sensor equipment.
